A Recipe for Taco Seasoning

Convenience.  That's the watchword in the 1st world.  Everything has to be convenient:  TV and stereo remotes, freeze-dried and microwavable meals, fast food, one-stop shopping at the supermarket or go big and get everything at the mall! 

Wifey asked me to look for Taco Seasoning.  You know, the small foil packages of Taco Seasoning mix that are so...convenient.  You can imagine there none to be found around here even in WalMart or Sam's Club.  Hey, this is Mexico!!!  People don't  buy taco seasoning, they make it!  From scratch.  

Well, that's not convenient at all you might say.  But the shame of it is, if you do any amount of regular cooking (you know, the old fashion way...slicing, dicing, steaming, braising, etc.) you probably have all the ingredients you need for a tasty Taco Seasoning without any unnecessary preservatives or added chemicals.

Now, as with most home-prepared items, the recipe will vary from place to place if not in ingredients, the quantities.  Some like more garlic, some like more cumin...some like it exceptionally spicy!  Hey, that's the joy of cooking is it not?

So here's my recipe for taco seasoning.  Double, triple, quadruple the recipe if you want.  Add more or less of one or more ingredient and taste test until you find the combination you like.  You can keep all the ingredients the same and just try different types of paprika.  Sweet, smoked, Hungarian, Spanish, etc.  Each one will lend a different flavor to the whole.

One special note however:  Taste your ground chili/pepper first so you have a good idea of how hot it will make the end result.  Our local supply is quite spicy.  Since the spiciness depends on which peppers are used, yours may vary in intensity.  Easy to add more, impossible to take it out once mixed.  You've been warned!


3 TBS chili powder
4 tsp ground cumin
2 tsp Kosher salt
2 tsp ground black pepper
1 tsp garlic powder
1 tsp Hungarian paprika
1/2 tsp onion powder
1/2 tsp red pepper flakes
1/2 tsp ground oregano

Buen provecho!

I make Mexican Casserole pretty often as a result of popular requests. I use ground beef instead of chicken on occasion.

However I use package seasonings like taco, burrito or fajita. Be glad to mail you some. Only $1.49 each. However I will try your recipe even though it is less convenient :)

Quadruple (or more) the recipe and store it in an airtight jar in a cool, dark place. That way it's always available for full meals no matter how many guests or just a sprinkle on the plate.
No need to run into town to track down those pesky packages at the last minute and you'll save money!.
How convenient is that!
